Robiola Tre Latte: Blend of Piemonte cow, goat and sheep’s milk, aged 60 days.
Roccolo: Raw Lombardy cow’s milk. Fairly strong and nutty, aged 8 months.
Taleggio: Raw Lombardy cow’s milk. Rich, salty cheese, aged about 60 days.
Pecorino Nero di Pienza: Tuscany-sheep’s milk. Only milk from a single herd of black sheep can be used to make this cheese. Aged roughly 18 months.
Bleu des Causses: French cow’s milk raw. A sweeter blue, aged about 4 months
