"Chez Paul has been a perennial
favorite on Maui for years, and it certainly has an asset in
Patrick Callarec as the chef-owner. Look for chilled
fennel-and-potato soup, homemade duck pâté, beluga caviar,
escargot, Kona lobster with fresh foie gras and tournedos of
beef in three-peppercorn sauce. This is a fine French

is located in the heart of Olowalu Village (a blip on the
highway -- if you blink you'll miss it), next to the Olowalu
Store. But it's worth the drive to this classic French
restaurant, now that Chef Patrick Callarec (formerly of the
Ritz-Carlton's Anuenue Room) has taken over the cooking. Look
forward to such delights as wild mushroom and goat cheese
pastry in an aged Port wine sauce, just to get started. Or
choose their signature dish of crispy duck with local fruits
or fresh island fish in a champagne and cream sauce. Don't
leave without the pineapple and vanilla crème brûlée, served
in a pineapple shell. The dress here is Maui casual, which
