"Adam's
food strikes the right balance -- healthful but not preachy,
gorgeous without any hint that it knows how good it is. At a
recent dinner over flickering candles, my wife and I shared a
heaping plate of smoked salmon enchiladas and Thai Prawns with
Mango and Mint...The salmon brimmed with the sophisticated spice
of home-smoking, mellowed by mild melted cheddar and sweet
corn...The shrimp was perfectly cooked, resting on a vibrant, delicious nest of diced carrots,
sliced cucumber, fresh mango, red onion, garlic, roasted
peanuts, Thai chiles, cilantro and some of the best noodles in
town...What makes Adam's such a great place, though, is that the
same thought and care are put into the most peripheral dishes."

"This cozy café
exudes rustic Victorian charm...The menu shows deference for
fresh ingredients, whole grains and regional nuances without
being overly chichi. The Senegalese vegetables are not to be
missed, the salmon is smoked in-house and their breakfasts are a
local institution. 'Their pancakes are out of this world,'
reveals Manitou Springs Mayor Marcy Morrison. 'It's a warm,
homey atmosphere, it's friendly and the wait staff is very
attentive."
